REVERSE-SEARED STEAKS

2 steaks (e.g. fillet, ribeye, sirloin) 3-4cm

1 tbsp vegetable oil

1 Place a rack in the centre of the oven and preheat the oven to 130°C/110°C fan/gas mark ½. Place a large cast iron pan in the oven to get hot.
2 Line a baking tray with tin foil and place a wire rack on top. Dry the steaks with kitchen paper to remove excess surface moisture and transfer to the wire rack. Generously season the steaks on both sides with salt and pepper.
3 Place the steaks in the oven and cook for about 15-25 minutes, checking with an instant- read thermometer after 15 minutes and every 4-5 minutes after that until cooked to your liking, according to the chart above. Once done, remove the steaks from the oven.
4 Carefully transfer the hot cast iron pan from the oven to the hob. Place the pan over a high heat and add the oil.
5 When the oil is very hot and just beginning to smoke, carefully add the steaks to the pan. Turn the heat to medium-high.
6 Sear the first side for two minutes without moving the steaks, until a deep brown crust is formed. Carefully flip the steaks over and sear for a further I h-2 minutes.
7 Use tongs to turn the steaks on their sides to cook the remaining fat briefly.
8 Add the butter to the pan and allow to melt, then use a spoon to quickly baste the steaks. Serve immediately with your favourite sides and sauce (we used chimichurri!).
