Marry Me Butter Beans

They don’t call it “Marry Me” Butter Beans for nothing — creamy, warming, and so good you’ll want to commit on the spot. Easy to make, packed with protein, and perfect with crusty bread for dunking.
Ingredients (Serves 4)
1 onion, diced
4 garlic cloves, minced
2 tbsp oil (from sundried tomato jar)
5 sundried tomatoes
100g plant-based cream
150ml plant-based milk
2 tbsp tomato paste
1 tbsp dried thyme
1 tsp chilli flakes
2 x 400g tins butter beans
250g spinach
Salt & pepper
Crusty bread, to serve
How to make it
Petunjuk
Start the base | Heat the sundried tomato oil in a deep frying pan over medium heat | Add onion + a big pinch of salt | Cook 8–10 mins until soft.
Blend it up | In a blender, blitz sundried tomatoes, plant-based cream + milk until smooth and dreamy.
Build the flavour | Add garlic + tomato paste to the pan | Cook 1 min | Stir in thyme + chilli flakes | Pour in the creamy tomato mix + butter beans (with liquid if organic) | Bring to boil, then simmer 10 mins.
Finish it off | Stir through spinach until wilted | Season to taste.
Serve | Pile into bowls with crusty bread — and try not to propose to it immediately.
