Mediterranean Pinwheel Kebabs

For the Beef Mixture

1 lb ground beef (85/15 recommended)

Salt and pepper (to taste)

1 tbsp onion powder

1 tbsp oregano

1 tbsp paprika

½ tsp cayenne pepper

1 small yellow onion

2 garlic cloves

3 tbsp walnuts

Handful of fresh parsley

Instructions

1. Season the Beef

Add the ground beef to a bowl. Season with salt, pepper, onion powder, oregano, paprika, and cayenne. Mix lightly.

2. Add the Flavor Base

In a food processor, blend together the yellow onion, garlic cloves, walnuts, and fresh parsley until very fine.

Add this mixture to the beef and mix thoroughly until well incorporated.

Let sit for about 1 hour to allow the flavors to develop (recommended).

3. Form and Assemble

Divide the mixture into 5 equal portions and roll into balls.

Place each portion onto a tortilla and smash it down so the meat covers the entire surface evenly.

4. Roll and Skewer

Roll up each tortilla tightly.

Using a sharp knife, slice into pinwheels (like sushi rolls).

Insert skewers through the sliced pinwheels to hold them together.

5. Prep the Pan

Place skewers on a parchment-lined sheet pan.

Add cherry tomatoes and red onion wedges around them.

Drizzle vegetables with olive oil, sprinkle with salt, and top with chili flakes.

6. Bake

Bake at 400°F for 25–27 minutes.

If liquid collects at the bottom of the pan, spoon it over the skewers for extra flavor — or reserve it for later.

7. Make the Yogurt Spread

In a bowl, mix Greek yogurt, parsley, mint, salt, pepper, olive oil, and lemon juice until smooth.

8. Serve

Serve skewers over yogurt spread.

Garnish with fresh parsley and either sumac or Aleppo pepper.

Enjoy as-is, with rice, or with a low-carb rice alternative.
