Classic Hamburger with Coriander and Tomato Salsa

Burger Ingredients:
454gms (1 pound) of the best quality ground beef
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 medium red onion, chopped finely
1 teaspoon of coriander seeds, crushed with the back of a spoon
1/4 bunch of fresh coriander leaves, chopped finely
4 burger buns
Tomato Salsa ingredients:
2 beef tomatoes or 4 medium tomatoes, chopped roughly
1-2 tablespoons of brown sugar
1/2 tablespoon of white wine or cider vinegar
1 green chilli, sliced finely
1/2 teaspoon of olive oil

How to make the burgers
1. Break up the meat with a fork.
2. Season the meat with salt and pepper and mix with the finely chopped onion, crushed coriander seeds and coriander leaves until everything is amalgamated.
3. Divide the meat equally into four balls, then flatten each one with lightly dampened hands until you have a burger. Brush both sides of each burger with olive oil before grilling so it doesn't stick. Grill on the barbecue (see instructions below) or cook on a skillet which you have preheated on the barbecue.
To grill on the barbecue:
3 minutes each side for rare
4 minutes each side for medium rare
5 minutes on one side and 4 minutes on the other for medium
5 minutes on each side for well done
To cook on the pan:
Heat a pan or skillet until you can barely hold your hand over it without having to pull it away. Add the burgers and cook, turning just once using the same cooking times above for barbecue grilling. There will be enough oil on the burgers to cook them. Toast the buns and pop in the burgers and top with tomato salsa (see recipe below).
Catatan
Don't be tempted to turn the burgers too early as they need to get a coating to seal them, otherwise they will stick.
How to make Tomato Salsa
1. Mix the sugar with the vinegar until the sugar is dissolved. Add the chilli and the olive oil. Season with black pepper. Taste and adjust - if it's too sharp add a little more sugar, if it's too sweet, add a few drops of vinegar to rebalance until it is to your taste. It will depend on how sweet your tomatoes are. Mix into the chopped tomatoes and chill until the burgers are ready.
Cook's note: Use green chillies so you can see them in the tomato salsa - that way your guests can remove them if they find them too hot. If you use red chillies, they will literally disappear into the red of the tomatoes and your unsuspecting guests could get a little overheated (and not from the flames of the barbecue!).
