Lemon Asparagus Parmesan Risotto

1 tablespoon vegetable oil

4 tablespoons (½ stick) salted butter

2 large shallots, diced

1 pound asparagus, tough bottom ends discarded, tips separated and rest of the stalks cut into bite-size pieces

3 cloves garlic, minced or pressed

½ cup dry white wine (like a chardonnay)

Juice of 2 lemons (plus the zest for serving; optional)

2 cups arborio rice

4½ cups chicken or vegetable broth

1 teaspoon seasoned salt

1 teaspoon black pepper

½ teaspoon Italian seasoning

1 cup grated Parmesan cheese plus more for topping

1/4 cup heavy cream or half-and half

Petunjuk

1 Hit Sauté and Adjust so the pot is on the More or High setting. Place the oil and butter in the pot and cook until just beginning to bubble

2 Add the shallots and cook for about 2 minutes, until softened. Add the asparagus stalks (not the tips) and garlic and sauté for another 2 minutes.

3 Add the wine and lemon juice and bring to a simmer, scraping up any browned bits from the bottom of the pot. Add the rice and sauté, stirring, for 1 minute.

4 Add the broth, seasoned salt, black pepper, and Italian seasoning. Stir well, again scraping the bottom of the pot to make sure nothing's stuck.

5 Secure the lid, turn the valve to the sealing position, and hit Keep Warm/Cancel then Manual or Pressure Cook on High Pressure for 6 minutes. Quick release when done.

6 As the risotto's cooking, place the asparagus tips and 1 tablespoon water in a microwave- safe bowl, cover with plastic wrap, and microwave for 1 minute. Keep the cover on and set aside until the next step.

7 When the lid is off, stir in the steamed asparagus tips, the grated Parmesan cheese, and the heavy cream and let stand until thickened, about 2 minutes. Serve topped with more Parmesan and/ or lemon zest, if desired.

Serve this with crusty garlic bread. It's nirvana.

If you don't feel like microwaving the asparagus tips and don't mind them softer, you can add them to the pot along with the asparagus stalks before pressure cooking.
