600g Udon Noodles
60ml (1/4 cup) vegetable oil
400g beef rump, thinly sliced
1/2 brown onion, thinly sliced
1/2 red capsicum, thinly sliced
1/2 green capsicum, thinly sliced
3 garlic cloves, crushed
1 tsp grated fresh ginger
2 green shallots, thinly sliced
Sesame seeds, toasted, to serve
5.00 gm cornflour
52 ½ gm Light Soy Sauce
61.00 gm oyster sauce
20.00 ml Chinese cooking wine (Shaoxing wine)
1 tsp freshly cracked black pepper
Petunjuk
Step 1
Place noodles in a large heatproof bowl and cover with boiling water. Stand for 1-2 minutes, loosening them gently with tongs. Drain and set aside.
Step 2
Meanwhile, to make the stir-fry sauce, combine cornflour, soy sauce, oyster sauce, Shaoxing wine and cracked pepper in a small bowl. Set aside.
Step 3
Heat 2 tbsp oil in a wok or large, deep frying pan over high heat. Add beef, season with a pinch of salt and pepper, then stir-fry for 2-3 minutes until just browned. Remove from the pan and set aside.
Step 4
In the same wok or pan, heat the remaining oil over high heat. Stir-fry onion, red capsicum for 2-3 minutes or until starting to soften. Add garlic and ginger and stir-fry for 30 seconds or until aromatic. Return the beef to the wok with the noodles and the stir-fry sauce. Stir-fry for 1-2 minutes or until glossy, evenly coated and warmed through.
Step 5
Serve your stir-fry topped with shallot and sesame seeds.
