100g butter
100m' milk
70mI water
140g plain flour, sieved
4 eggs
To serve:
Whipped cream
Fresh berries
Icing sugar

1 Preheat the oven to 200C/180C fan/ gas mark 6 and line two baking trays with parchment paper.
2 Put the butter, milk and water into a medium saucepan. Heat until the butter melts.
3 Remove the pan from the heat. Beat in the sieved flour really well with a wooden spoon until the mixture becomes smooth and pulls away from the side of the saucepan. Leave to cool for a minute.
4 Beat the eggs in a separate bowl, then gradually add to the dough. beating all the time with the wooden spoon until shiny and glossy
5 Spoon mounds of the mixture onto the trays, spaced well apart. Bake for 15 minutes, then lower the temperature to 180'C/160'C fan/gas mark 4 for the final 15 minutes. Make a hole in the side of each bun for the steam to escape and return to the oven for five minutes to dry out. Remove from the oven and place on a wire rack to cool completelv
6 Once the buns are fully cooled, cut them in half, fill with whipped cream and berries and dust with icing sugar. 0000
