2 tbsp tamarind paste

3 tbsp fish sauce

3 tbsp soft brown sugar

Juice of 2 limes

25Og rice noodles

1/2 tbsp vegetable oil

300g raw prawns (with tail on is optional)

1 red chilli, deseeded and chopped

2 cloves garlic, chopped

2 spring onions, sliced

2 eggs, lightly beaten

2 tbsp roasted peanuts, chopped

25Og bean sprouts

A handful of fresh coriander, chopped

Petunjuk

1 Heat the tamarind paste, fish sauce, sugar and

lime juice in a pan over a medium heat until the

sugar is dissolved. Set aside.

2 Cook the rice noodles in salted boiling water for

three minutes until soft. Drain and rinse the noodles

in cold water.

3 Heat the oil in a wok over a high heat. Add the

prawns and cook for one minute until the prawns

turn pink.

4 Turn the heat down to medium and add the chilli,

garlic, spring onions and cook, stirring constantly for

another minute.

5 Add the sauce from the other pan and the

noodles and toss everything together.

6 Add the eggs into the wok, let it set a bit and

then mix it into the noodles.

7 Add the peanuts, bean sprouts and coriander

and cook for a minute.

8 Serve in bowls with extra lime wedges.
