Creamy herby mashed potatoes

2.5kg Rooster potatoes, peeled and chopped

100g butter, plus extra for frying

1 garlic clove, crushed

300ml cream

1 sprig of thyme

1 small sprig of rosemary

1 bay leaf

Salt and black pepper

1 tbsp fresh parsley, chopped

Petunjuk

1 Add the potatoes to a pot and cover with cold water. Season with salt and bring the pot to a boil for 10 minutes. Drain the potatoes and return to the pot. Add the pot back to the heat and leave to stream dry for 1-2 minutes.

2 Meanwhile, heat some of the butter in a small saucepan over a medium-low heat and cook the garlic for 30 seconds until fragrant.

3 Add the cream, thyme, rosemary and bay leaf to the saucepan. Leave to simmer for 15-20 minutes, stirring frequently, until the mixture reduces by one-third. Strain through a sieve.

4 Mash the butter into the potatoes.

5 Gradually stir the warm cream into the warm potatoes until incorporated.

6 Stir in the parsley and season to taste with salt and pepper. Serve hot.
