Capirotada with Extra Pecans and Raisins

1 piloncillo cone

1 cinnamon stick

1 tablespoon vanilla extract

4 tablespoons brown sugar

2 cups water

1 loaf French bread, sliced and toasted

1 1/2 cups mozzarella cheese, shredded

1 cup mild cheddar cheese, shredded

1/2 cup coconut flakes (optional)

3/4 cup raisins

1/2 cup walnuts, chopped

1 cup pecans, chopped (plus extra for topping)

Petunjuk

In a saucepan, combine piloncillo, cinnamon stick, vanilla extract, brown sugar, and water.

Bring to a gentle boil, stirring occasionally until the piloncillo fully dissolves and the syrup slightly thickens.

Remove from heat and set aside.

Heat the oven to 350°F.

Arrange a layer of toasted bread slices in a large baking dish.

Sprinkle mozzarella, cheddar, coconut flakes (if using), raisins, walnuts, and pecans over the bread.

Repeat layering until all ingredients are used, finishing with extra pecans and raisins on top.

Slowly pour the warm syrup evenly over the layers, making sure all the bread is well soaked.

Let it rest for a few minutes so the bread absorbs the syrup.

Cover with foil and bake for about 20 minutes, until bubbly and the cheese is fully melted.

Remove from the oven and let it cool slightly before serving so the layers set nicely.
