1 celery stalk, finely diced (about ½ cup)
4 large hard-boiled eggs (2 chopped, 2 sliced for garnish)

Prepare the Potatoes: Place the peeled and chopped potatoes in a large pot. Cover them with cold water by about an inch. Add a generous pinch of salt to the water.Cook the Potatoes: Bring the water to a boil over medium-high heat. Reduce heat slightly and cook until the potatoes are fork-tender but still hold their shape (not mushy), about 10-12 minutes.Drain and Cool: Drain the potatoes thoroughly in a colander. For the best texture and flavor absorption, allow them to cool completely.
