Spiced Tomato Chutney
Makes: 4 x 450g jars

1 large white onion or 3 banana shallots, finely chopped
Splash of rapeseed or olive oil
300g dessert or cooking apples, cored and finely chopped
700g mixed tomatoes (cherry and beef tomatoes are best) , finely chopped
5 small red chillies, deseeded and finely chopped
5—7 large garlic cloves, minced
3 tbsps black sesame seeds
150g soft light brown sugar
2 tsps salt
1 tsp yellow mustard seeds
1 tsp ground cumin
1 tsp coriander seeds
300ml cider vinegar

1. Put the chopped onion into a large saucepan with the oil. Set the pan over a low heat, cover with the pan lid and sweat the onion gently for 5—7 minutes.
2. Add the apples, tomatoes, chillies and garlic to the pan once the onion is translucent and turn up the heat to medium. Cook for 5 minutes to break down the apples and tomatoes.
3. Add the remaining ingredients to the pan and stir well. Bring the mixture to a simmer and cook over a medium heat for 25—30 minutes, stirring intermittently to stop the mixture burning at the base of the pan. Once cooked, the consistency should be thickened and almost syrupy.
4. Take the pan off the heat and leave to cool for 10 minutes. Pour the mixture into sterilised jars and seal. Store in a cool, dark place for up to 6 months, (if you don't tuck in immediately!) Once opened, keep refrigerated and consume within 4 weeks
