2 tbsp vegetable oil
1 onion, grated
1 apple, peeled and grated
1 garlic clove
2cm-thick piece of fresh ginger, peeled
and grated
2 tbsp medium-hot curry powder
1 tsp turmeric
1 tsp paprika
2 tsp ground cumin
1/2 tsp ground coriander
1 tbsp plain flour
500ml chicken or vegetable stock
1 tsp Worcestershire sauce
1 tbsp tomato purée
freshly squeezed lemon juice and/or
sugar, to taste
1 quantity Classic fries

1 Heat the oil in a large non-stick frying pan with the onion. Cook over a medium heat, stirring occasionally, for 3-5 mins. Add in the apple, garlic, ginger, and spices. Cook, stirring for 1 min. Add the flour, a little oil if it's very dry, and cook, stirring for 1 min. While stirring, gradually pour in the stock.
2 Bring to the boil, then lower the heat to a simmer. Stir in the Worcestershire sauce and tomato purée and simmer for 15 mins. Add lemon juice and a pinch of sugar, if you like.
3 Transfer to a blender and whizz until smooth. Serve with the Classic fries.
