Street Taco Verde Salsa

Hozzávalók

200mL neutral oil

250g jalapeños, seeds removed

50 g white onion

15g garlic

70-100g zucchini

1 tsp kosher salt

Útmutatók

Lightly fry/brown each vegetable in the warmed oil, on medium heat. Do not wait until oil is smoking to add the ingredients.

Blend the vegetables until completely smooth.

With the blender running on low, slowly drizzle in that oil in a thin stream to create the emulsion.

Jegyzetek

Note: You can absolutely add more oil if you prefer. Taquerías often use much more because it creates a creamier salsa and stretches the yield. Feel free to add more until you reach your preferred consistency.
