Easy One Pan Enchilada Skillet

1 onion

8 corn tortillas (cut into strips)

1 lb ground beef

garlic

chili powder

cumin

coriander

paprika

oregano

salt & pepper

1 jar @SOMOS enchilada sauce

1 can black beans (drained & rinsed)

1/2 cup frozen corn

4 oz green chiles

shredded mexican cheese

Optional toppings:

cotija cheese

avocado

cilantro

sour cream

jalapenos

preheat oven to 350°

in a large saute pan (I like to use my @Caraway Home one 😍 code “EATSWITHALLY10” will get you 10% off) brown ground beef until no longer pink

drain excess grease if necessary

mix in diced onions, garlic, and seasonings, and cook until onions are softened

stir in black beans, corn, green chiles, and enchilada sauce and cook until heated through

top with tortilla strips and shredded cheese

cover with foil and bake for 20 minutes
