Tofu Vegetable Stir Fry

Hozzávalók

14 oz extra firm tofu

1 tablespoon cooking oil

1 medium sized carrot, peeled and cubed

1 medium sized zucchini, peeled and cubed

1 cup white mushrooms, roughly diced

2 cups broccoli florets

Salt and pepper to season

Sauce

3-4 cloves garlic, minced

2 teaspoon ginger, finely grated

¼ cup soy sauce

¼ sweet chili sauce

1 teaspoon sesame oil

2 teaspoons sriracha

¼ cup water

Cornstarch slurry = 2 teaspoons cornstarch + 2-3 teaspoons water

Útmutatók

Cut the tofu into ½ inch slices and lay them on the cutting plate. Cover them with two layers of paper towels and pat dry. Then, cut the slices into cubes.

Heat the oil in a large pan. Add the tofu and fry until golden brown. Then, add in all the prepped vegetables and cook until the vegetables are tender.

Prepare the sauce while the vegetables are cooking. Add in all the sauce ingredients and mix thoroughly.

Add the sauce into the pan with cooked tofu and vegetables and let it simmer until the sauce thickens and coats everything.

Serve with rice and enjoy!
