Israeli Sunday Brunch Made Right

6 tomatoes

1 onion, finely chopped

1 red pepper, finely chopped

6–7 garlic cloves, finely chopped

¼ cup olive oil

1 tbsp paprika

2 tsp salt

1 tsp black pepper

½ tsp cumin

2 tsp sugar

3 tbsp tomato paste

8 large eggs

Feta + cilantro to garnish

Útmutatók

Heat oil in a large pan. Place whole tomatoes face-down, add onion, pepper + garlic in the center. Cover, steam 30 min.

Peel tomatoes, mash, and mix with veggies.

Add spices + tomato paste, cook 10 min.

Crack in eggs, cook to preference (runny or set).

Top with feta + cilantro.

Sheet Pan Cheese Burekas

Cheese Filling:

1 cup cottage cheese (drained)

1 cup sour cream

1 cup feta, crumbled

1 cup shredded cheese (any kind)

A few slices of cheese, torn

2 eggs

You’ll also need:

2 puff pastry sheets (10x15”)

1 egg (for brushing)

Toppings: za’atar, sesame, chili flakes, or EBTB

Instructions:

Thaw pastry. Mix cheese filling.

Place 1 pastry sheet on baking sheet, spread filling, cover with 2nd sheet.

Cut diamonds. Brush with egg. Sprinkle toppings.

Bake at 375°F (190°C) ~45 min, until golden.

Rest 5–10 min, slice + serve.
