Sweet & Sour Chicken (healthier Version

For the Chicken:

2 lbs chicken breast, cut into bite-sized pieces

1½ tsp garlic salt

2 tbsp cornstarch (for coating)

2 tbsp oil (for cooking)

Veggies & Fruit

1 red bell pepper, chopped

1 orange bell pepper, chopped

1 medium yellow or white onion, chopped

1½ cups canned pineapple chunks, drained

For the Sweet & Sour Sauce:

½ cup sugar-free ketchup

⅓ cup rice vinegar

¼ cup brown sugar

2 tbsp low sodium soy sauce

1 tbsp honey

¾ cup water

Salt to taste

For the Slurry:

1 tbsp cornstarch

1 tbsp cold water

To Serve:

Toasted sesame seeds (optional garnish)

Steamed white or brown rice

Cook the Chicken

Toss chicken with garlic salt and cornstarch until well coated.

Heat oil in a large skillet or wok over high heat.

Cook chicken in batches until golden and cooked through. Set aside.

Cook the Veggies

In the same pan, add a little more oil if needed.

Sauté the bell peppers and onion over high heat for 3–4 minutes until lightly charred and softened. add the pineapple chunks and sauté for another minute.

Make the Sauce

In a bowl, whisk together ketchup, vinegar, brown sugar, soy sauce, honey, and water.

Pour into the pan with the veggies and pineapple and let it simmer for 2 minutes.

Thicken the Sauce

Whisk together cornstarch and water in a small bowl.

Stir into the sauce and cook for 1–2 minutes until thickened and glossy.

Bring It Together

Add the cooked chicken back into the pan and toss to coat evenly. Taste and season with salt if needed.

Finish & Serve

Sprinkle with sesame seeds and serve hot over cooked rice.
