How to Get Crispy Tofu Without Frying

Perfectly crispy tofu, full of flavour in every bite — no deep-frying needed.

This is my go-to tofu prep, and it’s so easy I eat it almost every day:

Recipe for crispy glazed tofu, tossed in a sweet-savory glaze

1 block firm tofu (±400 g)

1 tbsp salt (for boiling)

1 L water (for boiling)

1 tbsp potato starch or cornstarch

Drizzle or spray of oil

For the marinade + glaze:

1 tbsp light soy sauce

½ tbsp dark soy sauce

1 tbsp rice vinegar

1 tbsp dark brown sugar

¼ tsp sesame oil

White pepper to taste

½ tsp grated ginger

1 garlic clove, minced (optional)

1 tsp crispy chili oil or a pinch of chili flakes (optional)

1 tsp starch to thicken (for the sauce)

Cut or tear the tofu into bite-sized pieces. Boil in salted water for 5 minutes to firm up the texture. Drain well. Mix all marinade/sauce ingredients in a bowl. Take 2 tbsp of the sauce and marinate the tofu. It soaks up the flavor in seconds. Toss the tofu in starch until evenly coated. Drizzle or spray lightly with oil. Airfry at 200°C (390°F) for 10 minutes until golden and crispy. Heat the remaining sauce in a pan. Stir until thick and glossy. Add the crispy tofu and toss to coat.
