Sweet Chilli Garlic Crispy Tofu

(Tofu):
400g extra-firm tofu, pressed
2 tbsp cornflour
1 tbsp soy sauce
Pinch of salt
2 tbsp vegetable oil (for frying)
Sauce:
2 tbsp sweet chilli sauce
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp toasted sesame oil
1 garlic clove, grated
½ tsp fresh ginger, grated
1 tsp sriracha or chilli paste (optional)
1 tsp cornflour mixed with 2 tbsp water
To Serve:
100g fresh beansprouts
Chopped fresh coriander
Toasted sesame seeds
Rice or noodles (optional)

Cut tofu into bite-sized cubes. Toss in soy sauce, salt, and cornflour to coat.
Fry in vegetable oil until golden and crisp on all sides. Set aside.
In the same pan, add sweet chilli, soy sauce, vinegar, sesame oil, garlic, ginger, and optional sriracha. Heat gently.
Stir in cornflour slurry and cook for 1–2 mins until thick and glossy.
Return tofu to the pan and toss well to coat.
Serve over fresh bean sprouts. Garnish with coriander, sesame seeds, and a drizzle of extra sauce if you like it saucy.
Tip: Air fry the tofu for a lighter version, or bulk it up with rice noodles for a full meal. Add a splash of lime for zing!
