Steak and Mushroom Tacos with Green Chiles

2 pounds sirloin or other favorite cut of steak
5 tablespoons olive oil, divided
4 cloves garlic, minced
2 tablespoons chopped fresh marjoram, thyme, or toasted dried Mexican oregano
Juice of 1 lime
Salt and freshly ground black pepper, to taste
Tacos
13/4 cups (8 ounces) sliced mushrooms (such as shiitake, portobello, crimini, etc.)
1 medium onion, thinly sliced
1 cup green chiles, diced, roasted, and peele (depending on the season, use New Mexica
Anaheim, or poblano chiles; frozen green chiles also work well)

1. Marinate steak at room temperature for 30 minutes in 3 tablespoons of olive oil mixed with ganic, herbs, and lime juice.
2. Remove from marinade and sprinkle liberally with salt and pepper. Cook on a chargrill or in a broiler until rare to medium rare. Allow steak to rest for 15 minutes. Cut into half-inch-wide strips and slice thinl across the strips to produce bite-size slices.
3. Place remaining oil in a preheated skillet on medium high. When oil is very hot, add mushrooms and saute for 1 minute, stirring several times. Add onion and continue for about 2-3 minutes more, until

Slightly browned. Cook the steak slices with mushrooms and onion for 2-3 minutes more, then mix in green chiles. When chiles are heated through, remove from heat and serve with tortillas. Serving suggestion: Accompany with assorted condiments, cheeses, salsa, salad, and refried beans.
