Breakfast… but Make It Feel Like a Real Cookie Treat

Dry
2 cups oat flour
6 tbsp ground flaxseed or chia (I do 3 tbsp of each)
1 tbsp baking powder
½ tsp salt
1 tsp cinnamon (optional)
Wet
¾ cup plain Greek yogurt
6 tbsp nut butter
¾ cup liquid egg whites or 4 large egg whites
3 tbsp maple syrup or honey (more for additional sweetness- optional)
1 tbsp. vanilla paste or 2 tsp. Extract
Optional add-ins
Up to ¾ cup total: dark chocolate chips, chopped nuts, dried fruit, seeds or coconut.
Blend the dry ingredients first. Add to a large bowl. Then Blend all the wet ingredients and add to the dry.

Mix together and then add in all your nuts , fruit and chips.
Let rest for 15 minutes.
Spoon onto a parchment lined baking sheet. Bake on 350F for 12-14 minutes.
Let cool completely.
Keep in fridge.

If not using egg whites
Replace the ¾ cup egg whites with ¾ cup aquafaba or ½ cup extra yogurt + ¼ cup milk. Texture will remain stable.
