Peanut Dressing:
1/4 cup Peanut butter (I used @spreadthelove)
1/2 Lime
1/4 cup tamari ( or soy sauce) @sanjtamari
2- 3 tbsp Honey
1 tsp Garlic powder
1 tsp Ginger powder
1/4 cup Rice vinegar @marukanvinegar
1/2 cup Olive oil @kosterina
Sprinkle of salt and pepper
Chicken salad :
1 Rotiesserie chicken or 2-3 chicken breasts @farmerfocus
2-3 Green onions
1 1/2 cups Coleslaw mix
1 cup chopped Cashews
1/2 cup Cilantro
2 mini cucumbers
Upute
In a small bowl whisk together all peanut dressing ingredients, set aside.
Chop your chicken, veggies and cashews and put in a large bowl, and mix in about 1 cup of dressing mixture into bowl and mix. Serve with crackers, lettuce wrap or even a tortilla. Enjoy!
