Cheese Sauce

Sastojci

Cheese of choice. 100 gm

Liquid of choice (beer, milk, water). 85 gm (75-100 gm ok)

Sodium Citrate 4 gm (4% of cheese weight)

Upute

1. Add liquid to saucepan and bring to simmer

2. Add Sodium Citrate to liquid and FULLY dissolve

3. Add cheese to mixture and stir/whisk until fully melted. Whisk should have NO strings of cheese hanging off of it. Mixture will become completely smooth, like a cheese sauce in a jar or restaurant.

Sauce may be refrigerated and re-melted.
