Chicken Caesar Salad Sandwich

Ingredients (makes 2 sandwiches + fries)

½ tbsp Light Mayo

½ tsp Coarse Dijon Mustard

½ tbsp Parmesan

200g Nonfat Greek Yogurt

16 oz Chicken breast, raw, skinless

2 Classic Burger Buns

½ cup Panko Breadcrumbs

½ Egg Yolk

2 tsp Ground Cayenne Pepper

2 tbsp Parmesan

2 Medium Russet Potatoes

1 tsp Anchovy Paste

Salt, pepper, garlic powder, paprika

Olive oil spray

Make the Caesar Sauce – In a bowl, mix Greek yogurt, light mayo, Dijon mustard, 0.5 tbsp parmesan, cayenne, anchovy paste, salt & pepper. Chill in the fridge.

Bread the Chicken – Dip chicken in egg yolk, coat in panko + 2 tbsp parmesan + garlic powder + paprika.

Cook the Chicken – Air fry at 400°F for 14–16 min until golden & 165°F internal temp.

Air Fry the Fries – Slice potatoes into fries, toss with olive oil spray, salt, pepper, paprika. Air fry at 400°F for 15–18 min, shaking halfway.

Toast the Buns – Lightly spray or butter, toast until golden.

Assemble Sandwiches – Bottom bun → crispy chicken → anchovy-loaded Caesar sauce → extra parmesan → lettuce if desired → top bun.

Serve with the hot, crispy air-fried fries on the side.
