1 cup butter/2 sticks quality butter
✳️update: add a little more butter;some recipes call for half stick. Should be a little less dry.
1 cup ground pecans (good quality)
2 cups flour
3/4 - 1 cup powdered sugar
I used 1 cup!
1 tsp vanilla (important- needs the moisture).
I used 1 tbsp but some recipes call for as much as 4 tsp. Won’t hurt to add more

Mix flour, nuts and sugar together
Have butter slightly soft and mix it in by hand. “Squash it” into the mixture.
Mix in vanilla
Refrigerate until able to handle
Roll out dough into small shapes.
Roll on wax paper
Cut into 1/2 inch slices.
Refrigerate. (Not sure how long?)
Bake at 350 degrees for about 10 minutes.
Let cool before rolling in powdered sugar
✳️Update: after grinding the pecans, I toasted them in the oven until fragrant. Let cool before adding to other ingredients.
I baked one batch unchilled and another chilled for a few minutes. It doesn’t really matter unless you’re rolling out the dough, which I did not.

By the time you read this I will have made these for the first time. They were Grandadddy’s favorite at Christmas. His mother always made them and as a child I thought they were a little dry. However, Aunt Robin started making them and they’re much better; they taste more like wedding cookies. I rolled intro balls like I do with sugar cookies.
