Sweet Chilli Popcorn Chicken Meal Prep

This one was a SUPER F*CK.

High protein, simple to prep, and that @mingleseasoning Sweet Chilli Sauce carries the whole meal 🤤

Ingredients, serves 4

Popcorn Chicken

800g chicken breast diced, 28oz

1 tbsp soy sauce

instead of all the seasonings I just used @mingleseasoning “use me on everything” seasoning.

1 tsp salt and pepper

1 egg

40g cornflour, 1.4oz, may need 10g extra, 0.35oz if it clumps

Air fry 200C, 392F, for 10 to 12 minutes or oven bake 220C, 428F, for 15 to 18 minutes, flip halfway.

Sweet Chilli Glaze

90ml @mingleseasoning Sweet Chilli Sauce, 3oz

60ml light soy sauce, 2oz

80ml water, 2.7oz

1 tsp minced garlic

1 tsp minced ginger

1 tbsp rice vinegar

Juice of half a lime

Sweet Sticky Rice

200g uncooked sticky rice, 7oz

3 tbsp rice vinegar

1 tbsp sweetener

Salt to taste

Garnish

Sesame seeds

Green onions

Optional Veg

Sliced cucumber mixed with soy sauce hits different 🥒

Upute

Cook rice. Air fry chicken. Toss chicken through glaze. Build your bowls with rice and garnish.
