Cinnamon Scroll Muffins

Cinnamon sugar mixture
1 ½ cups lightly packed brown sugar
20g cinnamon
70g butter, melted
1 cup walnuts, chopped coarsely
Base
250g plain flour
3 tsp baking powder
1/2 tsp salt
60g caster sugar
60g butter, melted and cooled
1 egg, room temp
1 cup milk
Icing
60g cream cheese, softened
125g icing sugar
1 Tbsp milk
dash of vanilla
Upute
Heat the oven to 200 degrees. And GENEROUSLY grease 10 muffin tins with butter.
Combine the cinnamon sugar mixture ingredients. Mix well. Set aside.
Sift the fry ingredients into a large bowl (flour, sugar, salt, baking powder). Make a well in the centre and add the milk, eggs & cooled melted butter. Mix together until just combined. Fold in half the cinnamon sugar mixture.
Spoon 1/4 cup of the batter into the muffin tins. Top with the remaining brown sugar mixture.
Bake for 12-15 minutes. Let it cool for at least 20 mins whilst making the icing mixture.
Drizzle the cream cheese icing mixture all over AND ENJOYYYY!!!!!! ❤️❤️❤️
