How to:
Upute
Pat the steak dry, season with salt and pepper and cover with oil
In a pan at high heat, sear the steak for a few minutes on both sides
Finish in the oven until an internal temperature of 48 degrees Celsius or 120 degrees Fahrenheit. Let rest
Cowboy butter sauce
250 gr butter
½ lemon zest + juice
3 minced garlic cloves
1-2 minced shallots
1 tbsp Dijon mustard
2 tbsp paprika powder
1 tsp cayenne
2 tbsp parsley
1-2 tbsp chives
Chop the chives, parsley, shallots and garlic for the sauce.
Add butter to a pan on low heat, let melt and add the Dijon, lemon juice, paprika and cayenne while whisking constantly to emulsify (don’t let it boil).
Turn off the heat and whisk in the chopped ingredients.
