3/4 cup butter, melted
3/4 cup brown sugar
1 tsp vanilla
1 1/4 cup all-purpose flour
1 1/4 cup old fashioned oats
1 tsp baking soda
1/2 tsp salt
1 (11oz) bag Kraft soft caramels with the wrapping removed
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
1 cup toffee chips

Preheat oven to 350F. Line a 9”pan with parchment or aluminum foil and spray with cooking spray.
Combine the melted butter, brown sugar and vanilla in the bowl of a stand mixer and mix to combine well. Add the flour, oats, baking soda and salt and stir to combine.
Press half the mixture into the pan smooth it evenly with a measuring cup. Bake for 8 minutes.
Meanwhile combine the caramels abs cream in a pot and melt gently over medium low heat stirring frequently until smooth.
When the base layer is done, sprinkle with chocolate chips and toffee pieces. Pour the caramel over and spread evenly. Spread the remaining oat mixture over the top and bake for 18 more minutes.
The bars will be completely melty at this point so you need to let them set for a couple hours. They set up a lot better the longer that they do. If I am bringing these to a party, I always make them the night before and cut them in the morning for neater squares.
