Hot, steamed rice

2 tablespoons unsalted butter

1 cup chopped onion

2 tablespoons minced garlic

28-ounce San Marzano tomatoes or 4 cups peeled and cored fresh tomatoes, hand crushed and juices retained

1-1/2 teaspoons kosher salt, or to taste

1/4 teaspoon freshly cracked black pepper, or to taste

1/2 teaspoon Old Bay seasoning, or to taste

1 teaspoon Creole or Cajun seasoning, or to taste

2 teaspoons granulated sugar, optional

1 tablespoon fresh, chopped parsley

1 tablespoon fresh, chopped basil

1 cup heavy cream or half and half

1/2 teaspoon hot sauce

1/2 teaspoon dried red pepper flakes, optional

1-pound small to medium raw shrimp, peeled and deveined

1/4-pound cooked crawfish tails

1/2 cup lump crab

Prepare rice according to package directions.

For the sauce, melt butter in a saucepan over medium heat. Add the onion and cook just until tender, about 4 minutes; add garlic and cook another minute.

Add the tomatoes with their juices, salt, pepper, Old Bay, Cajun seasoning, sugar, parsley and basil.

Bring to a boil, reduce heat to medium low and simmer for 25 minutes.

Stir in cream or half and half.

Add hot sauce and dried red pepper flakes, if using.

Add shrimp and crawfish and simmer until shrimp begin to turn pink.

Fold in crawfish and crab and warm through. Taste and adjust seasonings.

Spoon into individual bowls over hot, steamed rice and serve with a green vegetable or mixed garden salad and some warm rolls or cornbread.
