Marshmallows

3 tbsp (21g) gelatin
1/2 cup (120mL) water
2 cup (400g) sugar
2/3 cup (160mL) corn syrup
1/4 cup (60mL) water
1/4 tsp salt
1 tbsp (15mL) vanilla

Bloom the gelatin in 1/2 cup water in the bowl of a stand mixer for 10 minutes.
Put the sugar, corn syrup, remaining water, and salt in a pot and boil until it reaches 250F (120C).
Start the mixer on a medium speed and slowly pour in the hot sugar mixture on the side of the bowl until all is added. Turn the speed to high and let go until marshmallow has fluffed up. Near the end add in the vanilla and if wanted for extra richness a tbsp or 2 of butter (softened).
Pour into a well greased, corn starch/powdered sugared 9x13 pan and let cool to room temp.
Once cool, powder the top of the marshmallows with more corn starch/powdered sugar mixture and lay down on a cutting board. Cut to desired size and throw into a bag with more of the corn starch/powdered sugar mixture to prevent from sticking.
