These were a childhood favorite of mine. When I came across my mom’s recipe, I decided to make them for my family and they loved them. They’re so easy to make and can be lower in carbs by omitting the potatoes and peas.

RECIPE - Makes 4

1 lb round steak

1 whole carrot

2 stalks of celery

1/2 cup mushrooms

optional:

16 mini potatoes

1/4 cup frozen peas

1 can 98% fat free cream of mushroom soup

1 Lipton onion soup packet

4 pieces of aluminum foil

Preheat oven to 400 degrees F.

Cut the steak, carrots, celery, mushrooms and potatoes into bite sized chunks.

Equally divide all of the veggies and meat into the middle of each piece of tinfoil.

Mix together the cream of mushroom soup and onion soup packet and then spoon the mixture over top of each one.

Fold up the sides of the foil and pinch together to form a “pocket.”

Place on a baking sheet and bake for 45-50 minutes.

If you omit the potatoes and peas, each dinner would be: 7.5g net carbs, 8.5g total carbs 230 calories and 1.5g sugar
