- LEAVEN*
* Make approximately 10-15 hours before making dough; time may vary depending on house temperature
• 1 cup water
• 1 cup White Kamut flour or 1 cup + 1 Tbsp organic all-purpose flour
• 2 Tbsp sourdough starter
* Combine all ingredients in a large jar and cover on the counter until it is active and bubbly.
- DOUGH
• 2 cups leaven (from above)
• 7 cups White Kamut flour or 7½ cups organic all-purpose flour
• 2/3 cup honey, divided
• 2¼ cups water
• 3½ Tbsp melted butter or oil
• ¾ cup warm milk
• 1 Tbsp French gray coarse salt

* Prepare the sponge by combining the active leaven (from above), water, milk, ⅓ cup honey, and 4 cups of flour. Let sit for 20 minutes.
* Add ⅓ cup honey, 2½-3 cups flour (depending on which flour you are using), melted butter, and salt.
* Pour onto a floured surface and knead dough for 10-12 minutes, adding the rest of the flour and any additional flour needed to make the dough soft and elastic.
