Roasted Veggie Sheet Pan Mix ЁЯеХЁЯНВ

Sweet, salty, crunchy - one cozy pan with melty feta on top.

YouтАЩll Need (serves 4):

тАв 2 cups Brussels sprouts, halved

тАв 2 cups butternut squash cubes (or peeled pumpkin)

тАв 2 cups sweet potato cubes

тАв 1 1/2 cups beet chunks (fresh, peeled)

тАв 3 tbsp olive oil

тАв 1 tbsp maple syrup

тАв 1 tbsp balsamic vinegar

тАв 1 tsp Dijon mustard

тАв 1 tsp garlic powder

тАв 1 tsp dried parsley (plus a pinch for top)

тАв 3/4 tsp salt

тАв 1/2 tsp black pepper

тАв 1/2 cup dried cranberries

тАв 1/2 cup walnut halves

тАв 1/2 cup crumbled feta

Optional: Topping / Side

тАв Extra feta crumbles

тАв Warm dinner rolls on the side

1. Heat oven to 400┬░F. Line a sheet pan.

2. In a big bowl, toss Brussels sprouts, squash, sweet potato, and beets with olive oil, maple syrup, balsamic, Dijon, garlic powder, parsley, salt, and pepper.

3. Spread veggies out in one layer. Roast 25тАУ30 minutes. Toss once halfway.

4. Sprinkle cranberries on the pan for the last 5 minutes so they get soft and warm.

5. Pull pan out. Top with feta and walnuts.

6. Sprinkle a little more parsley and serve warm.

Tip:

Crowded pan? Use two pans so the veggies get browned, not steamed.
