Sweet potato layers:
2–3 large sweet potatoes
1 tbsp olive oil
Salt & black pepper
Meat sauce:
2 ⅕ lb lean ground beef
1 large yellow onion, diced
4 garlic cloves, minced
2 tbsp tomato paste
Two 14-oz cans crushed tomatoes
2 tsp dried oregano
2 tsp dried basil
Salt & black pepper
Protein béchamel:
18 oz cottage cheese
Topping:
7 oz shredded mozzarella

Slice the sweet potatoes into thin rounds. Toss with olive oil, season with salt and pepper, then bake at 425°F for 12–15 minutes, until just tender.
Meanwhile, sauté the onion until softened. Add the garlic and cook for another minute.
Add the ground beef and cook until browned. Stir in the tomato paste, crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10–15 minutes.
Layer the meat sauce, sweet potato slices, cottage cheese, and mozzarella in a baking dish. Repeat until everything is used, finishing with mozzarella on top.
Bake at 425°F for 12–15 minutes, then broil for 2–4 minutes until the cheese is golden and bubbly.
Let it rest for 10 minutes before serving.
