Pistachio and Mint Kofta with Fresh Herb Sauce

KOFTA
1/2 cup panko breadcrumbs
1 large egg
500 grams lamb mince
1 teaspoon each dried mint, ground cumin and ground coriander
1/2 teaspoon ground allspice
2 cloves garlic, crushed
2 teaspoons finely grated lemon zest
1/4 cup pistachios, finely chopped
sea salt and ground pepper
TO COOK AND SERVE
1 cup Greek natural yoghurt
1 cup mixed soft herbs (use any combination of basil, mint, oregano, parsley and marjoram)
2 cloves garlic, crushed
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil, plus extra for cooking
cos lettuce, leaves separated 2 cups grated raw beetroot
1/2 cup toasted mixed seeds (l used pumpkin, sunfiower and sesame seeds)

KOFTA: Combine all the ingredients in a large bowl and season with salt and pepper. Form into short, thick sausages. Chill until ready to cook.
TO COOK AND SERVE: Blitz the yoghurt, herbs, garlic, lemon juice and oil in a food processor until smooth. Season with salt and pepper. Chill until ready to serve.
Heat a little oil in a large frying pan over a medium heat and cook the kofta, turning regularly, until golden and cooked through, about 2-3 minutes each side, depending on thickness.
Spoon some of the yoghurt sauce onto a large platter and arrange the kofta on top, drizzling with more sauce. Arrange the lettuce and beetroot alongside, drizzling the beetroot with a little olive oil and sprinkling with the seeds.
