Chicken Parm w Sauce

8 Thin Sliced Chicken Breast

2 Eggs

1.5 cups of bread crumbs

1 whole chopped shallot

5-6 garlic cloves chopped

1tsp red pepper flakes

1tsp dried parlsey

1/4 cup tomato paste

Two cans of italian tomatoes

fresh basil & parsley

Parmesean rind

Heavy cream

Sautee 1 whole chopped shallot & 5-6 garlic cloves chopped, 1tsp red pepper flakes, 1tsp dried parlsey on low heat in EVOO (extra virgin olive oil)

Add 1/4 cup tomato paste to the pot and stir on med for 2 min let it cover the entire pot

Add two cans of italian tomatoes (i got mine at a local italian market)

Add a healthy handful of fresh basil & parsley, blend it with an emulsion blender or take it off the stove and put it into a reg blender

Return to pot and add parmesean rind (do not blend this) and more basil. Add 1 tablespoon salt & 1 teaspoon pepper

Add in 1/3 cup of heavy cream
