Lemony Chickpea & Kale Stew w/ Crispy Sourdough:

2 cans parsley & cumin seasoned chickpeas
1 package shredded kale
1/2 package fresh basil
2 cloves of garlic
1 lemon, juiced
1/2 red onion, diced
Mozzarella pearls
Salt, pepper, red chili flakes, 1-2 tbsp olive oil
Sourdough for serving

1. Boil 1 quart of water and blanch kale for 30 seconds. Place into a bowl of ice water to stop it from cooking more.
3. Combine blanched kale, basil, lemon juice, garlic cloves, salt, pepper, and 1/4 cup of water in blender. Blend until SUPER smooth.
4. In a large saucepan over medium heat, drizzle 1 tosp of olive oil and add onions. Once onions are soft, about 4-5 minutes, add in the chickpeas and cook for another 1-2 minutes. Add in blended kale/basil mixture and simmer over low heat for 5-10 minutes.
5. Meanwhile, crisp up some sourdough bread in a small saucepan with some butter.
6. Once done simmering, top chickpea stew with mozzarella pearls, red chili flakes, and a drizzle of olive oil.
7. Serve with crispy sourdough and enjoy!
