Crispy Chicken & Pesto Penne

2 boneless skinless chicken breasts

salt & pepper

flour

2 eggs

Italian seasoned bread crumbs

olive oil

garlic

1/2 cup pesto

3/4 cup heavy cream

1/4 cup chicken broth

12 oz penne pasta

shredded parmesan

boil noodles according to package directions

slice chicken breasts in half lengthwise, and pound to thin

season both sides with salt & pepper

dredge chicken in flour, then egg wash, then bread crumbs

heat olive oil in a large saut├й pan

cook chicken on both sides until crispy golden brown and internal temperature of 165┬░F, remove from pan

add garlic to pan and saut├й for 1 minute

mix in pesto, heavy cream, and chicken broth, and simmer until bubbly

mix in cooked noodles and grated parmesan

serve pasta and chicken with additional parmesan and fresh basil
