Honey Butter Chicken

400g boneless chicken breast (14.1 oz)
2 tsps white vinegar
30g thick yoghurt (1/8 cup)
1 tsp garlic powder
1 tsp paprika
1/2 tsp red chilli powder
1/2 tsp salt (adjust to your taste)
50g plain or all purpose flour (1/4 cup + 1 tbsp)
25g cornflour or cornstarch (3 tbsp + 1 tsp)
3 tsps cold water
30g butter, salted (2 tbsps)
6 cloves of garlic, minced
1/2 tsp paprika
1/2 tsp dried parsley
a pinch of red chilli flakes
30ml honey (2 tbsps)
1 tsp lemon juice
Instructions
cut boneless chicken breast into even, bite-sized pieces.
add the chicken to a large bowl, and then add the white vinegar. mix this into the chicken and let the chicken rest at room temperature for about 20 minutes.
then add the thick yoghurt, the garlic powder, red chilli powder, paprika and salt. mix all of this into the chicken pieces until completely coated.
once the chicken is coated in the seasonings, add flour and cornstarch to the same bowl. mix this into the chicken until it's completely coated in the flour and cornstarch.
add the cold water to the bowl and mix it in to the chicken.
heat up oil in a pot or pan over medium-high heat. once the oil is hot enough, gently add the chicken one by one to the oil, taking care not to overcrowd the pan. once the chicken has been added to the oil, turn the heat down to medium.
let the chicken pieces fry in the oil over medium heat for about two minutes, undisturbed. then, gently stir them in the oil and change sides.
continue to let the chicken fry in the oil for around another 3 minutes over medium heat until they look golden and crispy. fry the chicken in batches. you should fry each batch for a total of 5-6 minutes.
using a wire skimmer, gently remove the crispy chicken from the hot oil and drain any excess oil. then place the chicken on a wire rack.
fry the next batch of chicken in the same way.
once you've fried all the chicken, make the honey butter sauce. heat up a small pan or pot over medium heat. add butter to the pan, and let it melt.
add the minced garlic to the pan. cook the garlic in the butter over medium heat until the garlic becomes a light golden colour.
once the garlic looks a light golden colour, turn the heat off and immediately add the seasonings: dried parsley, paprika and red chilli flakes, and mix them into the garlic butter mixture.
add honey and mix this into the sauce, and then add the lemon juice and mix this in.
add the crispy chicken pieces into the sauce and gently mix them in until completely coated in the honey butter sauce.
sprinkle some sesame seeds over the honey butter chicken, then serve and let's eat!
