Ground Turkey Sweet Potato Skillet

Ingrédients

1lb ground turkey

3 garlic cloves, minced

1 medium sweet potato, chopped

1 cup yellow onion, diced

1 cup shredded mozzarella cheese

1/2 cup vegetable broth

1 can black beans, rinsed & drained

3 tbsp green onion

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp sea salt

2 tbsp extra virgin olive oil

Instructions

Start by adding extra virgin olive oil to skillet. Add minced garlic and onion to sauté.

Place sweet potato in the microwave for 2 minutes (you want to do this so it will cook evenly with the dish) Be sure to let it cool before cutting into cubes.

Add ground turkey to the skillet with garlic and onion. Cook to brown. Mix in seasonings: chili powder, garlic powder, smoked paprika, cumin, sea salt.

Chop up sweet potato into even cubes.

Add sweet potato to skillet with veggie broth. Add lid on top of skillet to allow to cook faster. This should take 9-10 minutes until sweet potato is fork tender.

Add in black beans and gently mix to combine.

Reduce heat to medium low and add shredded mozzarella on top. Place lid to allow cheese to melt for 2-3 minutes.

Top with green onion.
