These muffins are another PERFECT meal prep option and are freezer friendly! Each muffin has 10g of protein and they are completely customizable with your favourite mix-ins!
All ya need is:
4 eggs
1 cup cottage cheese
½ cup milk
1 ripe banana
1 tablespoon olive oil
⅓ cup honey
2 teaspoon vanilla extract
1 ½ cups all purpose flour
¾ cup ground flaxseed *see full recipe for substitutions
½ cup peanut butter powder *see full recipe for substitutions
2 teaspoon baking powder
2 teaspoon cinnamon
½ teaspoon nutmeg
1 cup optional mix-ins
Instructions
Bake at 400 for 5 minutes before reducing the temperature to 350 and baking for 20 mins-
