Gut Friendly Tuna Patties

INGREDIENTS
185g tin tuna, drained
½ teaspoon ginger, minced
¼ red onion
finely diced ½ cup carrot
grated ½ cup spinach chopped
2 large free range cogs
2 tablespoon psyllium husk
2 tablespoon almond meal
¼ cup parsley, chopped
Salt and pepper
1 tbis extra virgin olive oil
Instructions
METHOD
1 Finely dice red onion, grate carrot and chop spinach and parsley. Add into a large mixing bowl
2 Drain oil or brine from tuna and add into the bowl.
3. Add all other ingredients except the oil - ginger, eggs, psyllium husk, almond meal, and season with salt and pepper. Mix well to combine.
4. Divide mixture into 6 and shape into patties.
5. Heat oil on medium in a large non-stick frypan.
6. Cook patties for 4-5 minutes per side until golden and cooked through or 20mins in oven at 200
7. Divide tuna patties into 2 serves.
8. Serve with 2 cups non-starchy veggies or salad plus portion of low Gl carbs of choice.
Notes
We eat these all the time. I double the ratio and freeze them. You can double ratios at the top next to the grocery list icon.
Psyllium husk is a fibre that feeds good gut bacteria and promotes regular bowels, which is essential for removal of toxins and excess hormones.
