Jalepeno Monkey Bread

Ingrédients

7g instant yeast

2 x tbs honey

140ml lukewarm milk

50g melted butter

1x tsp Salt

450g Bread Flour

Mix:

100g grated Chedder

100g grated mozzarella

Handful of jalepenos chopped

2-4 garlic cloves crushed

Whisk yeast and water, add honey and whisk again, add melted butter and lukewarm milk and whisk again. Add flour and mix well till everything is totally combined. Scrape the sides of the bowl and the dough into a ball using a dough scraper or spatula. Cover and rest 20 min. After 20 min wet your hand and do 5 x stretch and folds, cover and rest 20 min. After 20 min repeat the same steps and cover and rest 1 hour.

While it’s resting grease the bottom of your dish and add parchment paper.

Punch down the dough and place on a well oiled surface. Roughly cut the dough into 15 -20 pieces depending how big you want them. They don’t have to be the same size just similar. Fold each one up rough to create a rough round shape (no need to roll these)

Instructions

Place half at the bottom of the dish and add 3/4 of the cheese mix around. Add the other half of the dough and sprinkle the rest of the cheese on top, around the sides and in the crevices. Cover and rest for 30 minutes while your oven heats to 180C

Place on a medium low shelf. Bake for 22-25min turning the oven down to 170C after 10 min.
