Creamy Roasted Cabbage Salad! My Husband Gave This Two Thumb

Ingrédients

Roasted Cabbage-

1 head green cabbage, chopped

1/4 tsp salt (to your taste)

1/4 tsp pepper (same, to your taste)

2 Tbsp olive oil

Creamy Almond Sauce-

1/2 cup almond butter

Juice of 1 lime

1/4 tsp salt

1/4 tsp pepper

1/2 cup ice water

3 cloves garlic, minced

Garnish:

2–3 scallions, chopped

1/4–1/2 cup toasted slivered almonds

Instructions

Preheat the oven to 450°F.

Roast the cabbage:

Spread the chopped cabbage on a sheet pan. Toss with olive oil, salt, and pepper. Roast for about 20 minutes, stirring once or twice, until the cabbage is tender and the edges begin to crisp.

Make the sauce:

While the cabbage roasts, whisk together the almond butter, lime juice, salt, pepper, ice water, and minced garlic until smooth and creamy.

Prepare the garnish:

Chop the scallions and toast the slivered almonds in a dry pan over medium heat until lightly golden.

Assemble the salad:

In a serving bowl, toss the roasted cabbage with the creamy almond sauce, scallions, and toasted almonds. Reserve a small amount of garnish to sprinkle on top if you want it to be pretty. 😉

Serve:

Enjoy warm or chilled
