Jjimdak(Korean Soy Braised Chicken)

3 lbs chicken thigh, deboned, quartered
4 - 6 oz wide Korean glass noodles
2 - 3 med /lg Yukon gold or equivalent in red potatoes
5 - 6 lg carrots
1 lg onion, big chop
5 - 6 stalks green onion, cut into 2 in pieces
Sauce:
1 tbs dark soy sauce
1/4 c fish sauce
1/4 c mirin
1/2 c fish sauce
1 tsp black pepper
2 dried peppers
15 - 20 cloves minced garlic
Instructions
Soak noodles
Bring pot of water to boil, blanch chicken for 1 - 2 minutes
Drain and rinse scum off chicken
Add chicken back to pot as well as sauce, simmer on medium high for 8-10 minutes
Add carrots and potatoes, as well as one cup water and simmer on medium for 10 minutes
Add onion and green onions, simmer on medium for 10 minutes
Add noodles and simmer for 2 - 3 minutes
