Apple Fritter Cake (gluten-free)

Ingrédients

1 ½ cups apples, peeled and diced (any apple!)

1/3 cup coconut sugar

1/2 teaspoon cinnamon

2 tablespoons tapioca flour

2 teaspoons water

1/3 cup butter, softened

3/4 cup coconut sugar

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

2 eggs

1 teaspoon cinnamon

2 1/4 cup gluten-free all purpose flour

1 teaspoon each baking powder and baking soda

1 cup yogurt of choice

1/2 cup powdered sugar

1-2 tablespoons milk of choice

1/2 teaspoon vanilla extract

Instructions

Preheat oven to 350 degrees and grease a loaf pan or line with parchment paper

In saucepan, add apples, sugar, cinnamon, water and tapioca flour

Heat for 5-6 minutes until softened and liquid thickens

Next cream together the butter and coconut sugar

Add in applesauce, eggs, vanilla and mix again

Then add in flour, baking powder, baking soda and cinnamon

Finally mix in the yogurt until smooth

Spread 1/2 batter into the loaf pan then the 3/4 of the apple mixture then cake mixture and remaining apple mixture

Bake in oven for 35-45 minutes and allow the cake to cool

Poke about 20 holes in cake then mix together the powdered sugar, milk and vanilla extract and drizzle on top

Slice into desired slices and enjoy!
