Ingrédients

2 eggs (can be replaced with 150ml whipped double cream)

250g mascarpone

250ml strong brewed coffee

2tbsp rum (optional)

6tbsps sugar

Lady fingers

Cocoa powder

25g grated chocolate

Instructions

Seperate egg whites and yolks.

With an electric whisk, beat egg whites until frothy. Add three tablespoons of sugar, then whisk until firm and bouncy. ★be careful not to whisk too much

Whisk the yolks with three tablespoons of sugar until thick and pale, then combine the mascarpone.

Add the egg whites to the yolk mixture gradually, folding them together.

Add rum to the coffee, then soak the lady fingers in the mixture.

Lay the lady fingers in a deep tray or bowl, then layer half the mascarpone mixture on top. Sprinkle the grated chocolate, before repeating another layer and dusting with cocoa powder.

Refrigerate for at least 4 hours before consuming.

Notes

if you don't use eggs, whisk double cream until fluffy and firm, before combining with mascarphone
