1 lb ground beef
1 small yellow onion, chopped
2 garlic cloves, minced
2 tablespoons tomato paste
1 teaspoon salt & pepper
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoons garlic powder
1 medium zucchini, grated
3 cups beef bone broth
2 cups elbow macaroni
2 cups shredded cheddar cheese
Instructions
Heat a skillet to medium-high heat.
To the skillet add ground beef, onions and garlic and cook until beef is browned, breaking in small pieces.
Add tomato paste and seasonings, stirring to combine and cooking for an additional 2 minutes.
Grate in the zucchini, add broth and dry pasta. Stir to combine and make sure most of the pasta is covered in liquid.
Bring to a boil then reduce to a simmer and cook for 10-12 minutes, or until pasta is tender. Stir frequently to ensure pasta doesn’t stick to the bottom of the pan.
Remove from the heat and stir in the shredded cheese.
